Chinese Food, Egg Foo Yong and Mu Shu Mixed Vegetables with noodles

EGG FOO YONG
In large frying pan, combine 1 Tbsp. butter, 1/2 can Bean Sprouts, drained, 1/2 cup onion, 1/4 cup chopped water chestnuts.  Cook 4 min.  Cool.
Beat up 2 eggs lightly, add 1 tsp Soya Sauce.  Add Bean Sprout mixture to the eggs.
On frying pan spoon out three circles.  Cook 3 min on each side.  Put aside warm.







In the Wok (now empty of saved cooking oil)
Add 3" Water and bring to boil. Add 1/2 package of Chinese Noodles.  Cook 1 1/2 min.  Drain.  Set aside.  In Wok with small amount of oil.  Heat Sliced Carrots, rest of Bean Sprout, Corn, rest of Water Chestnuts and red pepper, celery etc (if you have it).
Add cooked Noodles. 
Mu Shu Sauce.   Combine 1/4 Chicken Broth, 1 Tbsp. soy sauce, 1 tsp sugar, 1 egg lightly beaten.  Add to cooked noodle/veg...  cook for 2 min. 

I will have made up some cooked rice to go with this all.

Chinese Food homemade in Cabin... Sweet & Sour Chicken




THINGS I HAVE ON HAND.  CANNED CHICKEN, WATERCHESTNUTS, BEAN SPROUTS, CORN, PINEAPPLE, EGGS AND NOODLES.
First get the chicken into small pieces.  
 Make up batter.  1 cup flour, 1 egg slightly beaten, 1 cup milk, 1 Tbsp melted shortening.
Heat cooking oil (2") in Wok.  Coat chicken in Batter and dip in hot oil til light brown.
Drain cooked pieces on paper towel and put aside.  Only do about 6 pieces at a time.
SAUCE...      1/2 cup Soya Sauce, 1/2 cup Pineapple juice from can, 1/2 cup Brown Sugar, 1 Tbsp Dijon mustard or dry mustard.  1 tsp Garlic.    Heat all above and pour on the cooked chicken.  Stir in can of Pineapple.  Sprinkle with Sesame seeds.  Keep in warm spot.

The BEST Homemade Hamburger Buns

These keep Moist and are Wonderful.














4 cups flour
2 tbsp yeast
1 tsp salt
1/4 cup sugar
(Mix and make a well.)
Add 2 well beaten eggs, 3 cups lukewarm water, 1/2 cup powdered milk, 1/2 cup oil.
Mix, then add 4 more cups flour.
Knead for 9 minutes.
Let rise 15 min.  Knead a few times.  Let rise 15 minutes.  Make up Buns.  Let Rise 3/4 hour.
Bake at 350.  for 15 to 18 min.  Watch closely at the end.  Take out when slightly brown on top.

No Baking Required.... Chocolate Cream Bars

Vikki makes these up about once a month.  They are great, but as you can see there are four steps.
1st Step.
In double boiler or put one small pot into a bigger one like I do.  Heat water underneath.  Add.
1/2 c Butter
5 Tbsp baking cocoa
1/4 c Sugar
1 egg beaten
1 tsp vanilla.  
Cook stirring over simmering water until it reaches 160 and is thickened.

2nd Step
In a bowl mix 
1 1/2 cup Graham Crackers or 24 squares
1 cup flaked coconut
1/2 chopped walnuts
Stir in above cocoa mixture. You're going to be using that pot below so don't put it in the sink.
Press into a greased 9" baking pan.  Set aside. 

3rd Step.  Filling
Mix the below and spread over crust.
 1/4 cup butter softened.
3 tbsp milk
2 tbsp instant vanilla pudding mix
2 cups icing sugar
1 tsp vanilla 

4th Step   Topping
Melt 4 squares chocolate  (I use 2 Semi Sweet and 2 non sweetened)
1 tbsp butter.   Spread over Filling       Cool until set.

Easy Pizza in Bush Camp.... wonderful!!!


Now everyone loves Pizza and it is easy to do.  I always make up to large cookie sheets full.
One is always Ham and Pineapple.  The other is Deluxe Supreme....  These slices can be wrapped separately and Bryan can heat them up in the Line Cabins or on the trail.

EASY PIZZA DOUGH (This recipe is for one.... I double it.)
1 cup warm water
1 tsp sugar
1 tsp yeast
1/4 tsp salt
1/4 tsp olive oil (you can use veg)
Mix above with whisk.  Add 1 1/2 cup flour and stir until smooth.  Add another 1 1/4 cup flour to make a stiff dough.  Let stand covered for 45 min in warm spot.  Spread on oiled pans. If you are in a real hurry you don't even need to let it stand for the 45 min.  Just spread on the toppings and bake in 375 F or 190 C for 18 to 20 min.

PIZZA SAUCE
5 1/2 oz ( 156 ml) can of Tomato Paste
1 tsp (5 ml) dried sweet basil
1/2 tsp (2 ml) " oregano
1 garlic cut and minced or 1/2 tsp (2 ml) garlic powder
Salt and Pepper

HAM AND PINEAPPLE PIZZA
Open one can of Ham and slice thinly
Open a can of Pineapple and drain.  Save the juice for something else.  
Divide Pizza Sauce in half and spread on dough that has been pushed flat by your fingers onto the large cookie sheet.  Top with ham and then the pineapple.  put a light sprinkle of Mozzarella or Cheddar cheese.   Bake at 375 F or 190 C for 18 to 20 min.

DELUXE SUPREME PIZZA
Cut up Garlic Sausage, ( You can also use cooked ground Moose instead of Sausage.) Open a can of sliced Mushrooms, cut up some onions, open a can of sliced Black Olives, add Red Peppers and Tomatoes if you have them.
Spread Pizza Sauce on top of finger flatten pizza dough on a large cookie sheet.  Top with the above.  Sprinkle some cheese on top and Bake at 375 F or 190 C for 18 to 20 min.

CHICKEN PIZZA
Open canning jar of Chicken Thighs,  can of sliced Mushrooms, onions, Red pepper (if you have it).  Chicken and Rib's Sauce.    Sprinkle cheese and bake as above.

Moose Burgers.... Great with those White Buns

Remember Vikki made White Buns two days ago.  Well, it means we can have Burgers.
MOOSE HAMBURGERS
1 lb ground Moose
First mix 1 egg, 1 cup rolled oats, salt and pepper, 3 dashs Tabasco Sauce or Red Chilli Sauce, 1  Tbsp Worchestershire Sauce, 1 Tbsp Mustard.   Let this sit for 5 minutes to soften Oaks.  
Finely cut up 1/2 cup onion.  add Parsley flakes.  
Mix all the above.  
Add 1 Tbsp Olive Oil or Veg Oil to frying pan.  
Cook burgers for 7 min. on one side.  Flip over.  Cook for another 5 min.  Add grated cheese on top and cover for 1 min.    
During that time you can get out the Mustard, Onions, Lettuce, Mayo, and Dill Pickle.
Fabulous.  Bryan can eat three.

Easy Moose with Cabbage with Rice

Vikki likes to cook something that Bryan can take with him up to the Line Cabins.  This is easy and real good.
Easy Moose With Cabbage and Rice

l pound ground Moose fried with 2 cups onions. Add salt and pepper.
1 Cabbage cut and boiled.
Add Bacon drippings plus 1 Can Tomato Soup to boiled cabbage. 
 
 Put Cooked Undrained Cabbage in Roasting Pan
Add Meat and Onions
1 cup rice.
Add saurkraut
top with Can of cut up tomatoes.
Cover and cook on wood stove for 2 to 3 hours.





White Buns Plus Fabulous Cinnamon Buns


 Bryan's due back and so it's Baking Day.  This recipe is easy, great and makes Buns and Desert for a week.  The Cinnamon Buns freeze well.
WHITE BUNS
5 cups lukewarm water
6 Tbsp Sugar
1 Tbsp Salt... you can reduce to 2 tsp.
1/2 cup veg oil
2 eggs room temp
13 cups  flour
2 Tbsp instant Yeast.
Mix water, sugar , salt , oil , eggs, 5 Cups Flour and yeast.
Whisk.  add rest of flour slowly.  Mixing until you have to use 
your hands to turn the dough.  Remember to keep folding the 
dough down on itself to force air into it.  I use a timer 9 min.
Shape dough into a ball and place in greased bowl and turn it
to get grease on all of ball.  Cover and place in warm spot on 
Wood stove for 1 hour.




 Punch dough a few times.  Cut it in half.
One half for White Buns, the other for Cinnamon Buns.
CINNAMON BUNS
Roll out to 12 x 24. Use raisin water to cover dough.  Cover with plenty of Brown sugar, Cinnamon, and raisins. (I warm my raisins up in a cup of water on the stove to make them softer)
Roll and cut into 1" pieces, place on well greased cookie sheet and let rise (covered) for 1 hour.


 WHITE BUNS
Cut the 1 half into 2 pieces.  put one aside.
Cut this first part into 4 and then cut each of the 4 into 3 so that you have 12.  Place on greased pan, cover and let rise for 1 hour in warm spot.  Do the same with the rest. Just before putting in oven I put a egg white/water wash on buns with a sprinkling of sesame seeds.

Bake for 20 minutes at 350 F.  180C

With the Cinnamon Buns I drizzle a bit of (mixed 1/2 cup icing sugar with 1 tsp milk)
Wait til Buns are cool.

Pickled Oranges Recipe/ Poutine French Fries





We grow about 450 lbs of Potatoes each year and so they are a big part of our diet.  About every 2 weeks I cut up Potatoes into french fries.  Use my big Chinese Food Wok to heat the vegetable oil in and cook up the fries in small batches.
These I pat dry with paper towel and add to a big rooster pan and keep warm on the wood stove.  I then make up a package of Poutine Gravy mix and pour on top of fries.  Then add a little crated cheese and let melt.  NOW THESE ARE GOOD.

 WHO WOULD HAVE THOUGHT THAT PICKLED ORANGES WOULD BE GREAT!!!   but these are a real treat with pancakes or chicken or duck.
PICKLED ORANGES
4 Oranges scrubbed, put in saucepan with a pinch of soda.  Cover with water.  Bring to boil, then simmer for 20 min.  Cut into 8 wedges each.
SYRUP
2 cups w.vinegar           pinch cinnamon
1 cup sugar                   
1 tsp ground cloves       


Boil Syrup, add wedges.  Simmer 15 min.
I use small jars.  Place wedges in jars, add a Clove plus a Bay Leaf to each jar.  Cover with syrup.  
Seal and use Hot Water Bath for 10 minutes.
We're at altitude 535 meters.

In the winter when we don't have Oranges this is a real treat.

Hannah, Cheese Biscuits, Changine Oil and Fried Potatoes

Hannah is still happy. 
 Thank you all for the chicken information.  Great advise.  First I will check for lice and frost bite, then increase daylight as much as I can.  Also I will add more protein.  Bryan put a new Fuel Line Assembly on "Miss Piggy" and also is taking a spare battery plus jumper cables with him.  He is off to check the other line.  Wolves were out on the landing strip checking out all the tree markers.  2 big Bull Moose came off the Mountain behind us and are heading to lower elevations.  Bryan said all the Moose have left Walkers Valley now.
CHEESE BISCUITS
2 Cups Flour
4 tsp. Baking powder
shake of salt.
3/4 cup butter/margarine
1/3 to 2 cups grated cheese (cheddar or mozzarella
1/2 cup dried chives
1 cup water
Mix all ingredients together than add water.
Drop by large tablespoon onto ungreased cookie sheet.  Bake at 450 F for 10 to 15 minutes.
Boston Baked Beans
The Generator Oil gets changed every month.  The used oil is used as BAR OIL FOR THE CHAINSAWIt is changed in the cabin because it is warm and runs out easier.



The 2 x 4 is used to elevate the generator.  Bryan takes it outside to fill it up.



FRIED DICED POTATOES
Dix thinly.
Fry in 1/4 cup Vegetable Oil for 15 min.  Stirring lots.
Don't cover while cooking.

Baking Day

We don't see the sun but the Moon sure is wonderful at this time of year.    The Magpie showed up along with the lone Raven for half an hour and then they were off to check for the Wolf pack.  They are a sure sign that the pack is near by.

 The two Sussex Chickens stopped laying eggs about 4 days ago.  They were down to one egg every 2 days for a bit.  Now it is back to EGG REPLACER, the most unsatisfactory product.  It is just corn flour etc.  If any one knows how to get dried real eggs let me know.
The frozen Blueberries with a little flour, sugar and butter make a wonderful pie.  I tried canned pie fillings and they are just junk.  Too much sugar and corn starch.
FROZEN BLUEBERRIES ARE A WELCOME TREAT.
CHOCOLATE CHIP COOKIES, FLAX SEED-OAT BREAD, BLUEBERRY PIE, CINNAMON COOKIES
 I can make fresh whole -white flour with my Vita-Mix machine.  We buy 25 lb bags of Red Spring Wheat and keep it out in the shed.  When talking to our local Doctor in Atlin about staying healthy out here, he said the best thing you can do is use fresh flour for baking.  After two weeks of being ground it looses it goodness and vitamins.

Bryan roared into the yard happy to be back.  When he came in he said "Sure smells good in here".  Made the effort worth the while.

MOOSE Meat Recipes... CHEESEBURGER PIE, MOOSE WITH SAUERKRAUT AND DUMPLINGS


MOOSE CHEESEBURGER PIE.... Fabulously good!!!!
Biscuit crust
 2 cups flour
1 tbsp Baking Powder
2 tsp Sugar
1/2 tsp Salt
Mix above and add 2/3 cup milk and 1/3 cup cooking oil.  Stir.  Line bottom of greased pie plate 9".



FILLING 

Fry 1 lb of ground Moose meat and 1 Onion in cooking oil.  Add 2 Tbsp Ketchup with a little salt and pepper.  Add to crust.
Combine 1 -14 oz drained can of cut up tomatoes with 1/2 tsp sugar.  Add to top of meat.  Cover with 1 cup of grated cheese.   Cover with Glide tinfoil and cook on wood stove for an hour.  
CANNED MOOSE MEAT WITH SAUERKRAUT AND DUMPLINGS (Quick and Easy)
Put a little oil in Roasting pan.  Add two pints of canned Moose Meat (partially cooked before canning).  Add one cut up lightly fried onion.  Add salt and pepper. 
Add 4 cups Sauerkraut and 3 cups boiling water. Stir.  
Dumplings
2 cups flour

4 tsp baking powder
1 tsp salt and a little pepper
Mix and add 1 beaten egg, 3 tbsp melted butter and 2/3 cup milk.  
Mix and drop by spoonful onto Moose meat/sauerkraut. 
Cover with Roasting pan lid.  Cook on Wood stove for about 30 minutes.

Honda Generator Quit On Vikki again, Freezing Lemons

 Vikki had been on the computer, got her blogging done and had went and filled up all the water contains... so when the gen quit she didn't panic.  Even if she hadn't filled the water contains there's enough snow outside to get water for anything she needed to do.  Bryan would be back in a couple of days.  She went and looked if the gen needed oil but a couple of oz flowed out. 
When she checked the last of the fresh lemons Vikki decided to freeze the remainer.  She will just grate the frozen lemon, skin and all.
Christmas music on the XM radio is very cheery at this time of year.  Christmas baking of different cookies filled her day but the dark comes early at 4 pm now.  When on a little holiday this summer with her Mum Vikki found these little lights powered by AA Batteries.  It is surprising how they also brighten the spirits.

 Lights say they can be seen on www.primitivesbykathy.com  but I didn't check it out.


 These are Star Anise Cookies...
Those little lights will get good use out here in the cabin.
